Okay, so a few have asked for the Texas Sheet Cake recipe. Hopefully, you'll enjoy it as much as my family has over the years.
3 Parts-
Bring to boil-
-2 sticks butter or margarine
1 cup water
4T cocoa
Beat in bowl-
2 eggs
1/2 cup buttermilk (I have never bought buttermilk-to make this, put 1 1/2 t. vinegar with 1/2 cup milk)
1 T vinegar (in addition to what you just put in the buttermilk mixture)
1 t baking soda
1 t vanilla
Combine the two in the mixer after the first part has come to a boil and add:
2 c. sugar
2 c. flour (sifted)
1/2 t. salt
Mix all in your mixer. Place in an 11x17 inch pan. Bake at 375 for 15 min or so.
***Note, you really do need the 11x17 inch pan. It's hard to find...check Kitchen Collection stores at the mall/outlet mall (about $10). If you try to split it up, in smaller cake pans, it's just really not the same. When she's old enough, Madison will one day own her own Texas Sheet Cake pan, as my mom bought one for my sister and me :) It also makes a great pan for marinating a ton of meat if you are having a big party :) and, as I discovered this year, for making 28 batches of popcorn junk at the holidays :)
Frosting-Cook while the cake is baking
1 stick of butter-melt
4T cocoa
6T milk
Remove from stove, add
1 box confectioner sugar
1 t. vanilla
Mix together (I just use a spatula). Then, pour/spread onto the cake after it comes out of the oven. Don't let the cake cool much...the warmer everything is, the better. The frosting will cool quickly and almost become a hard layer on top.
ENJOY! Oh, my favorite pieces to this cake are the corners because the extra hot frosting collects in the corners :)
